Tasting Notes
This pre-made bottled Bellini is made with sparkling wine and peach nectar. It has a wonderful bold flavour of peach, which is present on the nose and carries through on the palate, offering a soft creamy texture with the gentle fizz. The flavours are delightful on the taste buds and linger slightly. A delightful way to begin a meal.
Process
Grapes were machine pressed. The pressed juice was then chilled and allowed to clarify for 3 days. The clear juice was racked off lees and transferred to the fermentation tank. The lees were filtered and combined with the rest of the juice. The juice was warmed to 15 degrees celsius and yeast added. The ferment was complete after 17 days and kept at 17-18 degrees and allowed to warm to 20 degrees towards the end to ensure completeness. The base wine was then cold stabilised and filtered, now ready to be converted into a Bellini.

Celebrating the intricacies of relationship we created this Stout, which has a lot going on. It is matured on Coffee beans, Cocoa nibs, Bourbon Vanilla beans & Tahitian Vanilla beans. Wow, that sounded tasty. To top that, it is aged on American Oak chips. This is a big beer loaded with dark roasted malts. Your mouth will be filled with coffee and chocolate flavours, supported by the warmth of vanilla. All is balanced by a good load of hops, which will bring this beer to a bitterness of 85 EBU which we hope is much higher than in your relationship. Cheers to her!

Unit price perA richly flavoursome rum from the Philippines, inspired by the story of Papa Isio, who played a big part in the late-19th century Philippine revolution. The rum itself is made using sugar cane grown on the island of Negros in the Philippines and matured in oak barrels for 7 years, after which it is blended and bottled.
Nose: Fruity notes up front, with sweet tangerines and apricots. This is followed by vanilla ice-cream, drizzled with runny toffee sauce.
Palate: Bags-full of vanilla and cinnamon. Hints of raisin, sultana and marmalade.
Finish: Medium length with punchy cinnamon.

Sea Foam V.2 is here! Few tweaks and changes since our out of the box smash debut release of Pet Nat - namely, a variety change. For the very first time, we?ve snagged some red hot Vermentino from the Riverland to make the core of this bubbly boi. We reckon it?s made the wine EVEN better.
Sea Foam is still as salty yet refreshing as ever. We took the bowl of nashi pears & green apples that were the core of the wine and added a touch more white nectarine, frangipani and a whiff of grassy freshness. Sea Foam is as close to the pure distillation of spring that we?ve ever released. Honestly, we?ve levelled up here. Sea Foam is like Terminator 2 - just that extra bit better.
