Named for a retired California Western Railroad steam engine on the Fort Bragg to Willits run through the Redwoods, Old No. 38 Stout is a smooth, firm-bodied stout with the toasted character and coffee notes of dark malts and roasted barley.

3.5% - Black Country Dark Mild

Mild, not mild. British Steel, Black Country Dark Mild. Malted Autumn barley, crystal, chocolate and roasted malts, fermented with a characterful English yeast strain, create a supremely drinkable ale with toasted hazelnut and toffee pop biscuit notes artfully balanced with English Admiral and East Kent Golding hops. Nowt soft comes out of the Black Country.

En Rama is a pure expression of dry sherry from Jerez. En Rama roughly translates to 'raw', which is exactly what this is. This wine is extracted from the barrels in Spring, when the flor is at it's thickest. This sherry is unfiltered and unfined. Best drunk fresh, En Rama tastes more intensely nutty and yeasty than the standard Tio Pepe. The palate is complex and fresh with a saline finish.

It is with great pleasure and excitement to announce our next limited release beer,

Limited Release 20 | Hazy DIPA 8.6%.

Limited Release 20 is an unhinged Hazy DIPA (Double IPA) brewed with our good friends and hype-lords from One Drop Brewing Co in Sydney. We dialled this one right up - fermenting it with a brand new, super fruity, biotransformative yeast strain and throwing all different hop formats at it - pellets, Cryo pellets (both US + NZ), Dynaboost liquid hops, Hyperboost liquid hops.

Why stop there? One Drop's infamous Clean Fusion(TM) technique was employed for the cold side hop additions - a process where hops are fused with clean fermented beer which has already been centrifuged to remove the yeast. Once all the magic hop oils had dissolved, the beer was then centrifuged one final time to remove any remaining harsh hop material and provide a clean, smooth and incredibly fruity and vibrant beverage.

Cyclone Gabrielle did not allow us to brew a fresh hop beer last year, so we are stoked to be able to bring everyone a fresh hop beer this year! We loaded our mash tun to the brim with Waimea West?s first harvest of Nelson Sauvin to bring you our 2024 fresh hop IPA.  All the usual suspects, white grape, lime and pungent aromas like its cannaboid cousin.  Limited release, get in quick!

A Bit Mixed Up. Three beers | Two of each | All good. Sawmill Nelson Sauvin IPA, East Coast IPA & Hazy Pale Ale

A Contemporary style IPA with an Irish twist. Combining the balance of European IPAs with the generous dry hopping of American pale ales (APAs), this beer is everything an IPA should be and more.

Zesty and refreshingly bitter, the finish is long. With a copper toned body topped with a lightly carbonated head, the dry hopping brings an intense aroma and lasting array of fruit and floral notes.

Earth Realm West Coast IPA 6.3% - 440ml Can

Punchy yet sharp, this is a single-hopped beer laden with Mosaic Cryo hops, Mosaic T90 and Mosaic Dyna Boost that hit first with a crash of bright citrus and tropical fruit aromatics followed by notes of resinous pine, blueberry and bubblegum, closing out with a light refreshing bitterness that balances out the rich European malt bill. Crushingly good.

Ledaig Sinclair Series Rioja Cask Finish is the first release in Tobermory distillery's Sinclair Series, this smoky Ledaig single malt has been made with heavily-peated barley and finished in hand-selected Rioja casks. Aromas of Turkish Delight, candied orange peel, leather, black pepper and dark chocolate fill the nose, complemented by notes of almond, raspberries, vanilla, cinnamon and freshly cut grass on the palate over rich waves of savoury peat smoke.

Hakutsuru is a gentle and incredibly drinkable sake. Its nose is an aromatic concoction of melon, grape, and sweet rice. Each sip is balanced with a rounded-out dry finish. The meticulous care used during brewing is reflected in the light complexity of the brew. Hakutsuru is charming, whether served cold or room temperature and amiable to everyone.

Lord Marples was the first ever Thornbridge beer! Brewed in 2005 at the Hall Brewery we wanted to try a traditional style for our initial offering, and a classic Bitter seemed perfect.

It pours an attractive mahogany, bringing forth flavours of honey and caramel with just a light bitterness in the finish to keep it balanced.

It?s named after Mr Marples, a former owner of Thornbridge Hall, who enjoyed using the title of Lord while never quite achieving it officially, we thought we would bestow it upon him.
