With its opulent and elegant texture, the Opthimus from Oliver & Oliver easily plays in the upper league of exquisite rums. It?s matured in former bourbon barrels for 18 years using the Solera process

Colour: red gold amber

Nose: pleasantly floating scents of caramel, bourbon vanilla and bananas roasted over oak.

Palate: full-bodied and soft, creamy vanilla, honey and shortbread dipped in chocolate, with a gentle nuance of freshly roasted coffee

Finish: creamy-soft finish with caramel-spicy notes.

"Red Mead" is a stunning medium sweet mead and fruit wine (technically melomel). It is made from native honey (including Manuka honey), with the fruitiness of boysenberry and the richness of plum. It can be served at room temperature or chilled. We expect it will make a great Sangria.

The Ultimate Delight in Sake

Ozeki Junmai Daiginjo is sake in its purest form-Junmai with no other alcohol additions and a Daiginjo that is the utopia of premium sake due to the polishing rate of the rice (over 50% of the kernel is removed). This combination brings a sophisticated flavor by combining ingredients and technique to create an easy to sip full-bodied sake. Fruity yet floral in aroma with subtle sweetness make this Junmai Daiginjo a rich flavorful experience.

A field blend of Pinot Blanc from the Bentwood Vineyard and Pinot Gris from the neighbouring Cross Hares vineyard. Picked on the same day.

Whole bunch Pinot Gris placed gently in amphora with direct press Pinot Blanc pressed atop. Fermented on skins in amphora for 6 months. The wine was then settled and blended with a puncheon of pinot blanc.

Apricot yoghurt, soft chalky tannin, crystallized ginger, peach ice tea salivating acidity.

The Bush de Noel is brewed solely from malts, hops, candy sugar and water. It is a filtered, top-fermented beer with an alcohol volume of 12%. The use of caramel malts produces a copper-coloured beer with a full, rounded taste. The Bush de Noel owes its fruity taste and subtle hop aromas to the well-thought out choice of hops in this brew
