The concept of Wabi-Sabi is hard to define. It is natural simplicity - flawed beauty - the way imperfection can make an object more compelling. Sourness produced by lactic bacteria in beer is normally considered a flaw. This beer is naturally soured and its sharp, tart character complemented with Honeydew melon and the juice and rind of fresh Yuzu. Nothing is perfect - but sometimes imperfection can be beautiful.
Kettle soured wheat, lightly salted and infused with white peaches - a delicate three way salty, sweet and sour balancing act. A little bit of white mischief in a beer where anything gose.

We're back with East Coast brewing legends Trillium for an all new collaborative celebration of hop growing terroir. This time we travel to Oregon's majestic Willamette Valley with hand selected hops from Coleman's Alluvial Farm. A hop free boil and massive dry hop addition of Strata, Luminosa and Audacia create a lusciously juicy hazy homage to the unique character of America's North West.
In Japan, during the briefest of seasonal windows, green yuzu on the cusp of ripeness is combined with crushed green chilli and salt, then fermented to create a uniquely piquant seasoning. Inspired by this tradition, Yuzukosh? is a kettle soured pilsner, brewed with green chilli, the fresh zest of locally grown green yuzu and a judicious dose of sea salt. The result is a beer that captures the essence of seasonal freshness, bursting with salty sour citrus, and delicate chilli heat. "
