The organic story at Seresin
One of the greatest things about Seresin Estate is the organic certification. This came relatively early on for Seresin, who was dismayed by the amount used and the impacts of man made chemicals, which were routinely and frequently sprayed on vines. His early adopting philosophy of organic certification paved a positive path for the integrity of the wines as well as leading others to follow suit.

Our Ghost Town Syrah is one of the few Syrah?s you?ll find from a region so famous for Pinot Noir. Handcrafted in limited quantities from our Bendigo Vineyard in Central Otago, planted in 2001 at a higher altitude. Together with Bendigo vineyard?s unique personality and minimal winemaking intervention, this Syrah displays fine texture and suppleness. We expect this wine to evolve with careful cellaring for a further 10-15 years.

Unit price perWinemaker Tony Prichard founded the De La Terre winery with his partner in life and in wine, Kaye Prichard and he began his winemaking career over three decades ago, which has given him extensive experience with red and white winemaking in Hawke?s Bay. He forged his early winemaking career with Merlot and Cabernet Sauvignon, so this wine is a little like coming full circle since he can apply the experience he learned with those varieties to make a full bodied, silky, spicy Syrah, which tastes impressively deep and velvety with its dark fruit flavours. Yann Chave's Hermitage vines are over 40 years old and are rooted in a soil of loess that faces South-West that enjoys abundant sunshine throughout the year.
After 100% destemming, vinification is as gentle as possible with a twice-daily pumping over and vinification temperatures of under 28?C.
The wine is then placed in new and one-year-old demi-muids. Malolactic fermentation takes place in these barrels, and wine is kept here for 12 months. After this maturing phase, the wine will then spend 6 months in a vat to decant naturally prior to bottling.
The nose shows complex aromas of blackberry jam, liquorice sticks and spice leading to a full and generous palate. Mid-palate reveals rich aromas of ripe fruit and a hint of smokiness. The tannins are dense and intense, but with great finesse, giving the wine imposing structure and a long finish. A truly superb wine.
