Wildflower ale, spontaneous fermented using only the wild yeast from freshly foraged m?nuka flowers, aged in oak barrels and then blended with a batch of fresh beer ?hopped? with m?nuka tips. Unit price perThis beer started out as two seperate barrels that we filled in 2018. Three years later we blended the two barrels together before separating the blend out into two different finishing barrels. This part of the blend was finished in an american oak barrel with 250g/L blueberries and raspberries.

This complex brown sour beer was inspired by the traditional Oud Bruin styles of West Flanders, Belgium. Aged in a single large oak foudre (vat) for 5 Years, a collection of wild yeast and bacteria go to work, slowly transforming the beer. The result is a unique beer, with a chocolatey-malt base mixed with sherry, leather, tobacco and a hint of smoke. Lactic acid bacteria add a distinct tartness, and Brettanomyces provide that classic wild funk.

A refreshing, light, hoppy, sour and very fruity tasting beer inspired by traditional Berliner Weisse ales.
Naturally soured by live cultures and hopped with American and New Zealand hops. Probably the closest thing I have tasted to fruit juice, that didn't contain any fruit at all!
