Unit price perAbel Methode Cider is made by us in small quantities, crafted from 100% apples and pears. We hand harvest tree-ripened fruit, crush it, then ferment until dry. This is quite different from your usual cider as we ferment the skins, stalks, pips and all, to maximize fruit aromatics and flavour. Abel cider is unfined and unfiltered. This basically means we allow our cider to naturally clarify via gravity to retain character. It's fermented in the bottle, like champagne. This natural carbonation gives a finer bubble which retains the aromas and flavours. Bottle fermentation adds complexity and texture, as well as giving cloudiness from the natural yeast sediment that remains.
Our cider is dry as this is the way we like to drink it - refreshing and full of flavour! ENJOY You have a couple of options when it comes to enjoying a bottle of Abel Methode Cider: EITHER...Place bottle upright in the fridge overnight, the colder the better. This will allow the natural sediment to settle to the bottom of the bottle. When you're ready to drink it, pour the clear cider (everything but the settled sediment) into a champagne flute or wine glass of your choice. OR...If you like cloudy cider, invert the bottle a couple of times then pour away!

Unit price perScoundrels and Rogues - Sometimes, bigger is better. Made by the most irrepressible Scoundrels and Rogues in North Canterbury, this Pear cider was made from the contents of only a few pear trees, fermented in barrels, and then promptly forgotten about for six months. It gives new meaning to the term rustic, as it's made in a very traditional French farmhouse style, with a strong pear character. You may love it, you may hate it, but i'm not sure i'm too bothered either way.
This Pear cider is rustic and funky, but you'll get over it.

Unit price perThis cider is the 3rd release of our original style, made with a touch of sweetness, to balance out the full body. It has spent 18 months in barrel, and is comprised of a blend of both dry and sweet cider batches, from a mix of heritage and desert apples. This blend gives it an impressive intensity, rich tannins, and a balanced sweetness, that should not be cloying. Once the juice is pressed it is left to undergo wild fermentation in old French oak barrels. Post ferment, the cider is aged in barrel, on lees, to build complexity and to soften the tannins. It?s designed to be a cider that delivers more than just sweetness and a light apple ?avour, it?s designed to deliver a balance between tannins, sweetness, and alcohol.
This cider is handmade and mildly offensive, but you'll get over it.

Unit price perPeckham's - To make Pommeau we ferment apple juice fresh from the press, allow it to mature and then have it distilled into apple brandy. About 12 litres of cider go to make each litre of brandy. The brandy is aged in oak casks until blended with fresh cider apple juice the following harvest. The sweet, brandy-rich Pommeau is then matured in oak for a further six months before bottling.
