Nautilus Cuvee Brut is inspired by the richness and depth of Bollinger Special Cuvee, which in turn takes its inspiration from Pinot Noir - which provides the toasty depths of flavour, along with three years ageing on lees in bottle, before release. The result is a dry, full bodied, deliciously yeasty sparkling wine is a blend of 71.4% Pinot Noir and 28.6% Chardonnay. All grapes are hand picked, fermented with a champagne yeast with only the first run of juice going to fermentation to retain a fineness in flavour and texture. The wine typically contains 5 to 15% of reserve wines, held back from previous vintages, to add complexity and consistency to the wine.
It is aged on lees in bottle for three years prior to disgorgement, which takes place regularly to ensure every bottle on the market remains fresh in flavour.

Nautilus Albarino is a limited edition wine made by Clive Jones at Nautilus winery where the cool temperature fermentation preserves the briny, salinity of Albarino's refreshing dry flavours. A brief period of ageing on yeast lees following fermentation adds a creamy balancing textural note to the taste and mouth feel of this lovely wine.
The Albarino grape is originally from north west Spain and north west Portugal, where it's known as Alvarinho; same grape, different name. In Portugal it is used to make refreshing light bodied whites such as Vinho Verde and an increasing number of great dry single varietal white wines.

Clean and crisp, dry Pinot Gris from Marlborough that is predominantly fermented in stainless steel to preserve the bright green fruit flavours, but also has a portion that is fermented in barrel to provide texture and complexity. Five months on the lees also gives the wine further flavour and builds texture in the wine, adding weight and complex, smooth and notes of creamy flavour.
This wine has aromas of cassis, ripe dark cherries, toasted spices, and savoury notes. The mid-palate shows fruit sweetness, while generous but fine-grained tannins contribute to a lingering elegant finish.
Vineyard
Nautilus Clay Hills Vineyard is located on the ridge that divides the Brancott and Omaka Valleys within the Southern Valleys sub-region of Marlborough. The vineyard is divided into 6 discrete blocks with different aspects and slopes and an elevation between 100 and 130 m. Normally picked midway through the Pinot Noir harvest window this vineyard has rapidly become the cornerstone block for Nautilus Pinot Noir where the clay-based soils contribute a silken texture and fine-grained tannins. The vines are trained to a VSP trellis system with a mixture of cane and spur pruning, with a target yield of 1.5 - 2.0 kg per vine.
Pinot lovers will adore this spicy, earthy and juicy medium bodied Pinot Noir from Marlborough's Southern Valleys, where elevated hillside vineyard sites benefit the early ripening Pinot grape. This is a great red with structure and impressive flavours for drinking now and also for cellaring, if willpower allows.
An aged release of the Nautilus Pinot Noir which shows all the typical complex floral characters of violets and rose petals, sweet dark cherry, plums, earthy notes and a touch of toasty spice on the nose plus some sweeter aged touches. The palate is concentrated and elegant with a fine dense core of tannins that have softened over time.
