Edda (?she? in Salento dialect) is the feminine and sensual soul of San Marzano. It is a complex white wine, full of Mediterranean notes. Noticeable acidity intertwined with an enveloping and elegant warmth, savoury and mineral notes on the palate. The Chardonnay grapes give the wine finesse and longevity, together with different varieties indigenous to Puglia, that year after year compete to complement the blend.

Unit price per100% Negroamaro from Contrada Monte La Conca, between San Marzano and Francavilla Fontana. The soils here are finely textured red soils thanks to the presence of iron oxides and the vines are head-trained bush vines, grown at a density of 500 vines per hectare. The grapes are harvested manually with small baskets and experience maceration for 18 days on 80% of the mass followed by 25 days on 20%, with native yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 ?C and maturation follows in French and Caucasian oak barriques for 12 months.
Deep purple red in colour with a rich and complex bouquet that shows hints of spice, soft fruit and cherry jam. The palate is full-bodied, smooth and balanced with fine tannins, and a pleasantly long finish.

Unit price perSan Marzano 'Talo' Negroamaro Puglia IGP is a full-bodied, deep purple red wine with violet reflections from the Apulian based company, San Marzano. It has an intense aroma of blackcurrant and wild fruit, with notes of spice, vanilla and balsamic.
The wine is aged in French oak barrels for six months and will age gracedully for five to six years. It pairs well with savoury dishes, meats and mature cheese.

Unit price per60% Corvina Verones, 25% Corvinone and 15% Rondinella from clay-calcareous vineyards situated in the hills of Valpolicella, north of Verona.
The process begins with selection in the vineyard of the best grape bunches that are subsequently pressed gently. This is followed by a skin maceration at low temperature for 8-10 days. The wine then undergoes a unique ?secondary fermentation? on amarone pomace in February, imparting the aromas and flavours of amarone?s dried fruit. The wine is aged for 18 to 24 month in medium and large size oak casks and then refines for at least 6 months in the bottle prior to release.
The wine is a ruby red colour with garnet hues and offers intense and persistent aromas on the nose. The palate is full bodied, dry and velvety, with black-cherry flavours and dried fruit on the lingering finish.

The vineyards are situated in the hills of the Valpolicella Classico north-west of Verona. The soil is calcareous marly.
The grapes are hand-picked and carefully selected, put in small plastic crates and dried in ventilated rooms for about three months. When they reach the perfect grade of dryness they are destemmed, pressed and fermented in stainless steel tanks. The fermentation lasts for about 30 days. After 12 months in concrete tanks, where it undergoes malolactic fermentation, the wine is transferred to oak casks of medium and large size for at least three years. After bottling the wine refines another 6 months.
