Unit price perOla Dubh, meaning ?Black Oil? in Gaelic, is craftily created by taking our Old Engine Oil and maturing it in 12 year old Highland Park whisky casks. The process is far from simple, but the result is a beautiful brew with complimentary whisky notes and a chocolate, roasty and bittersweet aftertaste. All thanks to the labour of love of our master brewers.
Brewer?s Notes: Ola Dubh is a labour of love. Everything about it is extreme. The brew team fill the mash tuns to the brim with roast barley, pinhead oats and malted barley. It ferments more slowly as the the yeast struggles to move around in such a viscous beer! The base beer is Old Engine Oil which they then put into Highland Park Whisky casks and it stays there for at least 6 months. During this time the flavours from the wood enter the beer to produce Ola Dubh. It is ready only when our Master Brewer, Stuart, deems it ready!

Unit price perWe brewed a light lager to barrel back in 2020. In rejecting stylistic norms we refermented this crispy boy warm on beautiful ripe neighborhood apricots in the summer of 2021. This beer is crisp and clean with a fruity nose and barrel character. Bottle conditioned, unfined, unfiltered.

Allow yourself to be seduced by the luxurious malt body, rich complexity and bright hoppiness hidden in this alluring red ale. We have taken a barrel of Lady Danger that we had been ageing for over 12 months and added this to our blend which has resulted in a potent perfume of ripe fruit wrestling in pine needles enchanting the senses. An abundance of US hops and balanced malt fullness round out the punchy flavours. This beer is perilously good and dangerously palatable, drinker beware.
A pale sour beer, aged for up to 2 years in wine barrels and then another year on fresh, local and organic feijoas from Helen and Peter at Quinta Feijoas (just down the road in Omaha) who have supplied the fruit for the last 6 years.

Unit price perOld Ale is a strong, dark and malty British beer style that, as the name suggests, is aged for long periods of time. Like historic versions, Not Too Heys was aged in oak barrels with Brettanomyces. Mahogany in colour with nutty, plum, caramel, wood and leather notes. Nicely balanced between the moderate sweetness, substantial bitterness and light acidity.

Unit price perBear Hug is an Oud Bruin style sour, otherwise known as a Flanders Brown. It was aged for 16 months in oak barrels, before being can conditioned for a further 5 months. This long aging period allows the Pediococcus bacteria to develop the desired sourness and also results in the malt profile acquiring some sweet sherry like flavors. A complex blend of dark malts and fruity esters, with balanced sweetness and sourness.
